Lemon Blueberry Cake with Whipped Cream Frosting

When I tell you this cake is magical, trust me, this cake is magical. It looks a bit like fairies made it and it tastes even better!
Lynne made this lemon blueberry cake a few days ago so we could take pics of our *beyond* adorable cake toppers / candle holders [ restocking so soon! ] and lets just say, it didn't last long beyond the photos. It's fluffy, fruity, and the perfect treat to satisfy a sweet tooth on a warm day. Lynne is kindly sharing the recipe below...you will want to try this one!
Ingredients: Cake: 3 cups flour (cake flour makes it a little more fluffy) 1.5 tsp baking powder .5 tsp baking soda 1 tsp salt 1 cup greek yogurt (i like full fat and can use really any flavor you have) 1 lemon zested (I grated with a cheese grater) 1 lemon fresh juice 2 cup sugar 2 sticks butter, could also use coconut oil (room temp) 3 eggs (room temp) 2 tsp vanilla 2 cup blueberry (tossed in a bit of flour)
Whipped Cream Frosting: 2 cup heavy whipping cream (cold) 3 cup powdered sugar 1 tsp vanilla Blueberry jam for color (or blueberry compote or reduction blended)
Instructions: For the cake:
  1. Preheat oven 350, line and non stick spray whatever cake pans you want to use (I used 2 - 9 inch and cut them on the bais)
  2. Mix flour, baking powder, soda, and salt in a medium bowl, set aside.
  3. Combine greek yogurt, lemon juice and zest in small bowl, set aside.
  4. With hand mixer or stand up mixer, beat sugar and butter until smooth. Add eggs and vanilla, mix until combined. Add flour mixture and greek yogurt mixture and mix until combined. Fold in blueberries.
  5. Pour batter equally in pans. Bake 30 minutes or until cake is set and wooden toothpick comes out clean. Removed from pans after cool.

For the frosting:
  1. With hand mixer or stand up mixer beat heavy cream until stiff beaks form. Mix in powdered sugar and vanilla until desired taste and consistency.
  2. To create a bit of ombre, I separated the frosting into 4 bowls, adding a bit of blueberry jam to each. Once the cakes were completely cooled I frosted the bottom with the darkest frosting and continued my way up using less dark and repeat. I blended them along the outside to create the look I was going for.
